Ingredients


For the cupcakes:

  • 125g unsalted butter, softened

  • 125g caster sugar

  • 2 large eggs

  • 125g self-raising flour

  • 2 tbsp milk

  • 1 tsp vanilla extract


For the buttercream:

  • 150g unsalted butter, softened

  • 300g icing sugar

  • 2 tbsp milk

  • A few drops of green or purple food colouring


For decoration:

  • Candy eyeballs (or white chocolate buttons and edible ink pens)

  • Sprinkles or edible glitter


Method

  1. Preheat the oven to 180°C (160°C fan) and line a 12-hole muffin tin with cupcake cases.

  2. Cream the butter and sugar together until light and fluffy.

  3. Add the eggs one at a time, mixing well after each. Stir in the vanilla extract.

  4. Sift the flour into the bowl and fold gently. Add the milk and mix until smooth.

  5. Divide the mixture evenly among the cupcake cases and bake for 15–18 minutes, until golden and springy to the touch.

  6. Cool on a wire rack before decorating.

  7. Make the buttercream by beating the butter until smooth, then gradually adding icing sugar. Mix in milk and food colouring until you get a creamy, spooky shade.

  8. Pipe or spread the icing onto the cooled cupcakes.

  9. Decorate with candy eyeballs, sprinkles, and glitter. The more monstrous, the better!
